We wanted to share a delicious recipe with you today and every Friday.  Nicola is going to be popping in and giving you a simple, quick and nutritious recipe to add to your meal plans. Enjoy!

Super simple and easy to make… Pan fried chicken with organic goats cheese, asparagus, orange pepper, spinach and mixed olives ???
A great mix of protein & healthy fats?
Chicken prepared in organic coconut oil!”

I N G R E D I E N T S ??

•1tsp Raw Organic coconut oil
(I love LucyBee!)

•150g Skinless Chicken Breast
(good quality)

•30g Soft Goats Cheese
(Organic where possible)

•1/2 Large Orange Bell Pepper
(or yellow if preferred)

•Portion of Green & Black Pitted Olives (around 12 olives)

•Portion of Asparagus – I used around 150g but please feel free to add more if you wish!

•Raw Spinach / Cucumber
(Unlimited amount)

•Black Pepper
•Balsamic vinegar

M E T H O D?

• Heat a non-stick frying pan and add the oil… Whilst this heats

•Slice the chicken into roughly 6 good sized pieces – once done add these to the pan and lower the heat

•Slice the pepper into strips and set aside for later…

•Keep an eye on the chicken turning frequently until sealed (meaning all meat will be white). Once meat is started to cook add the orange pepper to the pan to soften. Allow both to cook for 8-10 mins or until chicken cooked through. Continue to turn occasionally.

•Whilst chicken is cooking: add your Spinach, Olives & Cucumber to a mixing bowl – squeeze over the half lemon, add black pepper – and combine! If you want extra juice just squeeze a little more lemon over until dressed to your liking.
Once done, pop this onto your serving dish…

•Slice or roughly crumble your goats cheese and add to the spinach salad, followed by the cooked chicken and peppers

•Lastly, season with some ground black pepper & a drizzle of balsamic vinegar?
